Brussel sprouts + bacon

Much to my family’s chagrin, I am adventurous with my food. It was a Bountiful Baskets weekend so my refrigerator is stocked with fruits and vegetables not normally seen ’round these parts.

I found a super simple recipe from the food blog Nom Nom Paleo via Pinterest. I love Pinterest. Go check her out if you have time. She has a lot of fantastic recipes that I plan on exploring.

Roasted Brussels Sprouts

  • 1½ pounds Brussels sprouts

    This is what mine looked like before they went in the oven.
  • 2-3 tablespoons butter
  • Kosher salt and pepper
  • 4 bacon slices, diced
  • Aged balsamic vinegar

Here’s what to do:

Preheat your oven to 400°F. Trim the ends and any old outer leaves from the Brussels sprouts.

Cut the sprouts in half and toss them with the butter, salt, and pepper.

Dump them on a foil lined baking sheet, making sure to keep everything in one layer. Sprinkle the diced bacon over everything and pop the tray in the oven.

The recipe called for 30 to 35 minutes of roasting time, but mine were (maybe a little over) done at 20 minutes. Set your timer for 10 minute intervals to regularly rotate and flip the sprouts ‘n swine.

Check for seasoning and drizzle some of the aged balsamic vinegar on the finished dish.

 

The verdict: Good thing I served hamburgers and Wacky Mac so the family didn’t starve. Me, I overindulged on brussels sprouts.
